I don't know that it's ambrosia, but it's certainly in the running.

Yesterday, at work, I found a couple of jars of truffle honey which had been "damaged", i.e. the paper seal had been broken. At that point we won't sell them.

Since I found them, I got to take them home.

This morning I melted one (it had crystalised. They run 30 dollars (US) the 1/4 kilo, so they don't fly out the door), and added about a teaspoon into a cup of greek yogurt.

It was really good. Licking the spoon was almost better. It was an overwhelming flavor. It stunned me. I mean that. Pleasure sensor overload. Sweet, and truffle and volatile and persistent.

Much more savorable in the yogurt.

I shall have find other things to do with it. I sense some experimenting with amuse bouche.

Truffle honey and a nice sharp aged cheese like good parmiggiano reggiano or aged asiago is an excellent combination. Fantastic stuff! You get the the sweetness, sharpness, and earthiness all in turns.

It will be dear.

What she really needs to do is figure out what pots she needs,and more to the point, what special purpose pans (like a cataplana) she wants, and how to uuse them for lots of things.

That was certainly one of the major benefits of the ex working at Sur la Table: all the deeply discounted merch we got. My gorgeous Mauviel copper pans? Minor, and I mean minor, dings which the original purchaser found unacceptable and returned -- we picked them up for practically nothing. Jars and jars of saffron and sweet paprika. My Boos block has a nick on one edge the island has a bent wheel -- got them together for $50.

Wait til you get to participate in the once yearly employee warehouse sale! If they're still doing that.

My preferred tactic is to just dip a clean spoon into the honey jar, then eat the yogurt off of the honeyed spoon.

oh my oh my!

I need to find a reason to visit tenacious snail sometime when you are at home. I'd love to learn what truffle honey is like, have never been able to afford such an indulgence!
