I really should've said "case", rather than "chest" -- and your "...all the knives I think I need..." was an Inspired word-choice. As an ordinary home-kitchen-cook, I seem to be of the opinion that no more than five sharp knives are _needed_, and that a good argument probably could be made for only three.

Mind you, there's nothing wrong with wanting (or even feeling a need for) far more sharp-edged toys than that (I say when thinking back on my collecting-wood-planes phase). But beyond a certain point (to be determined by the individual) I think they do become toys.
